Ingredients

  • 10 cherry tomatoes, halved
  • 1/4 cup chopped cucumber
  • 1 spring onion, finely sliced
  • 1/2 green pepper, chopped
  • 1/4 cup KOO Red Kidney Beans, drained
  • 1/2 cup cooked quinoa
  • 1/4 cup KOO Whole Kernel Corn, drained
  • 5 olives, pitted and halved (optional)
DRESSING:
  • Drizzle of olive oil
  • Squeeze of Tru-Lem lemon juice
  • Salt and pepper

Method

Mix all the ingredients together, divide between two jars. Pour dressing over and seal with a lid until ready to serve.
