10 cherry tomatoes, halved
1/4 cup chopped cucumber
1 spring onion, finely sliced
1/2 green pepper, chopped
1/4 cup KOO Red Kidney Beans, drained
1/2 cup cooked quinoa
1/4 cup KOO Whole Kernel Corn, drained
5 olives, pitted and halved (optional)
Drizzle of olive oil
Squeeze of Tru-Lem lemon juice
Salt and pepper
- Mix all the ingredients together, divide between two jars.
- Pour dressing over and seal with a lid until ready to serve.
