2 hard-boiled eggs, halved
1 tbsp ricotta cheese
2 tbsp cottage cheese
2 tbsp finely chopped fresh chives
4 slices Albany Brown Bread
- In a medium bow, mash egg, cheeses and chives using potato masher or back of fork until combined. Cover with plastic wrap, refrigerate.
- Sandwich egg mixture between bread slices; cut as desired. Wrap in baking paper or plastic wrap.
