1 can KOO Chickpeas, drained and rinsed (reserve liquid)
Zest & juice of 1/2 lemon
1 tbsp tahini
1/2 - 1 tsp smoked paprika
2 tbsp roasted unsalted peanuts
1 tsp rapeseed oil
- Transfer three-quarters of the chickpeas into a food processor. Add the lemon zest and juice. Continue to add the tahini, paprika, peanuts and oil with 3 tablespoons of the chickpea liquid.
- Blend until smooth then stir in the rest of the chickpeas.
- Serve with fruit & veggie sticks.
