- 10 cherry tomatoes, halved
- 1/4 cup chopped cucumber
- 1 spring onion, finely sliced
- 1/2 green pepper, chopped
- 1/4 cup KOO Red Kidney Beans, drained
- 1/2 cup cooked quinoa
- 1/4 cup KOO Whole Kernel Corn, drained
- 5 olives, pitted and halved (optional)
- Drizzle of olive oil
- Squeeze of Tru-Lem lemon juice
- Salt and pepper
Mix all the ingredients together, divide between two jars.
Pour dressing over and seal with a lid until ready to serve.
